Carrot Cake

  • 1 Lil Buff Protein cake mix (Fit-Fetti)
  • 3 Tbsp egg whites or 1 large egg white (46g)
  • 1/4th cup of milk (Unsweetened cashew preffered) (30mL)
  • 1/3rd cup of pumpkin puree (about 75g)
  • 2 shredded carrots or 4 baby carrots
  • Dash of cinnamon
  • Cinnamon Cream Cheese frosting (Recipe on Frosting page)
Follow standard directions for making a Lil Buff Protein cake as seen in the "How To" page. Instead of using applesauce, substitute 1/3rd cup of pumpkin purée. Then add milk, egg white, shredded carrots, and cinnamon to the Lil Buff Cake Mix. Add a handful of raisins or chopped walnuts and place in the microwave for about 2:40. Once the cake has cooled, use the cream cheese frosting for the top of the cake. Garnish with chopped walnuts or some delicious peanut butter.
