Vegan Carrot Cake Un-Cream Cheese Roll
-2 two-ounce packs un-chubby bunny vegan protein cake mix, prepared as directed.
-4 ounces softened vegan cream cheese
-1/4 cup softened plant based butter
-1/2 cup powdered sugar
-splash of vanilla
-Mini white chocolate chips {from both cake mix bags, included}
Spray a cookie sheet or a cake roll pan with nonstick cooking spray. Spread prepared cake mix onto sheet, using a spatula to even out the batter. Bake at 350° for 12 to 15 minutes, or until golden brown. Immediately when it is remover the oven, cover with parchment paper, and unsent a towel, and another cookie sheet. Flip take over, and gently roll the cake, the parchment paper, and the linen into a tight roll. Allowed to cool for 20 minutes.
Unroll and allow to cool completely. Spread cream cheese mixture on the entire cake, allowing about a half an inch to be uncovered on each side. Sprinkle with any white chocolate chips. Re-roll the cake only, and gently cut off edges. Top with leftover frosting and mini white chips and enjoy!
