Vegan S'Mores Cupcakes

Un Pudgy Vegan S’mores Cupcakes 

Cupcakes: 
2 packages Un-Pudgy Fudge vegan cake mix
6 tbsp plant based milk of choice 

Frosting: 
1/2 cup vegan butter {I used Miyokos} 
1/4 cup vegan marshmallow creme 
1/4 cup powdered sugar 
1 tsp pure vanilla extract 

Topping: 
Crushed vegan graham cracker crumbs 
Melted vegan chocolate {optional} 

Combine cake mix and plant-based milk in a bowl and mix until combined. Divide evenly into for cupcake wrappers, and bake at 350° for 12 to 14 minutes. Allow to cool completely. Combine frosting ingredients until smooth, pipe or spread onto called cupcakes. Top with vegan graham cracker crumbs and melted vegan chocolate if desired . Makes four cupcakes. Store covered at room temperature for up to three days.
