Yummy Yam Cupcakes

  • 1 Lil Buff Protein cake mix (Fit-Fetti or Pump-it-up Spice)
  • 3 Tbsp egg whites or 1 large egg white (46g) 
  • 1/8th cup of milk (Unsweetened cashew preffered) (30mL) 
  • 1/2 cup mashed sweet potato  
  • Dash of cinnamon 
  • Cinnamon Cream Cheese frosting (Recipe on Frosting page) 
Follow standard directions for making a Lil Buff Protein cake as seen in the “How To” page. Instead of adding applesauce substitute with mashed sweet potatoes and add cinnamon and/or nutmeg. Swirl in some of the cream cheese frosting before placing in the microwave for about 2:40. Once the cake has cooled, use the rest of your frosting for the top of the cake. To make muffins/cupcakes spoon batter into greased muffin tin and place in an oven at 350F for 15-20 minutes. Top with Marshmallow Fluff or our protein packed Cream Cheese Frosting.
